- 1 whole chicken 3.5 - 4 lbs.
- 9 tablespoons Miss ‘P’ All Purpose Mix Seasoning
- 6 tablespoons salted butter
- 3 tablespoons BBQ sauce
- 2 teaspoons soya sauce
- ¾ teaspoons black pepper
- ¾ teaspoons salt
Wash and dry chicken, then place in a roasting pan. In a smaill bowl mix together the All Purpose Mix Seasoning, BBQ sauce, soy sauce, salt and pepper. Using a teaspoon upside down, loosen the skin and generously spread the marinated mixture under the skin, this will add lots of flavor to the meat. Rub the remaining mixture inside and all around the chicken. Place 3 tablespoons of butter in the inside cavity of the chicken then place the remaining 3 tablespoons of butter around the chicken. Tie the legs together with kitchen string and tuck the wings under the body of the chicken.
If you have time let this sit for 15 to 30 minutes.
Heat the oven to 375 degrees Farenheit (190 degrees Celsius)
Place roasting pan in the preheated oven and bake for 45 minutes. Remove from oven and generously baste chicken with its own natural flavoured drippings given off in the baking pan. Return to oven and bake for another 30 minutes. Remove from heat and baste one final time. Cover and let meat cool for about 30 minutes before carving.
Do not discard the drippings left in the roasting pan. This has all the infused flavors of the herbs and spices. Save it for our Easy Cook Gravy recipe.
