This is one of the most super simple and delicious meal that you can prepare… practically effortless.
- 2 lbs. Chicken cut into desired size (you can use thights and drumsticks)
- 6 tablespoons Miss ‘P’ Jerk Seasoning
- 3 tablespoons oil

Wash and dry chicken. I recommend scoring or putting a slit into the thickest part of the meat. Marinate with 6 tablespoons of Miss ‘P’ Jerk Seasoning making sure to thoroughly rub the Jerk Seasoning into the chicken particularly marinating under the skin and in the slits of the meat. Rub oil into the marinated chicken. Cover and let this marinate in the refrigerator for at least 2 hours (if possible 4 -6 hours is ideal or overnight).
Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius). Place the well seasoned and marinated chicken pieces skin side up into a baking dish. Bake for 30 minutes. Remove from oven and generously baste chicken with its natural flavoured drippings given off in the baking pan. Return to the oven and bake for another 20 - 25 minutes. Make sure the chicken is completely cooked.
If you like the chicken skin a bit crispy you can turn the oven to broil and cook for another 2 - 3 minutes. Be careful not to overcook or burn your meat. It is very easy to do this when you are broiling meat. I like to set a timer or alarm whenever I put meat on broil.
