Juicy Baked Chicken Thighs and Drumsticks

Ingredients
- 2 lbs. Chicken Thighs and Drumsticks
- 6 tablespoons Miss ‘P’ All Purpose Mix Seasoning
- 2 tablespoon bar-b-q sauce
- 2 tablespoon oil
- 1 teaspoon soy sauce
- ½ teaspoon salt
- ½ teaspoon black pepper
Method
Heat oven to 375 degrees Fahrenheit (190 degrees Celsius)
Wash and dry chicken. In a small mixing bowl combine Miss 'P' All Purpose Mix Seasoning, bar-b-q sauce, oil, soy sauce, salt and black pepper. Use this mixture to marinate the chicken thighs and drumsticks. You can score (put thin slit or cut into the fleshy parts of the meat) rub the mix ingredients into the meat. Make sure to also rub the mixed ingredients under the skin. This will add lots of flavor to your meat. I would suggest you let the meat marinate for at least 1 hour. If you have time you can always marinate overnight. Place meat in an oven proof dish with the skin side up. Bake for 30 minutes. Remove from oven and base each piece of chicken with the liquid juices in the baking pan. Bake for another 20 minutes or until the chicken is thoroughly cooked.
An instant-read thermometer inserted into the middle part of the chicken should read 165 degrees Fahrenheit (74 degrees Celsius).
If you like the chicken skin a bit crispy you can turn the oven to broil and cook for another 2 - 3 minutes. Be careful not to overcook or burn your meat. It is very easy to do this when you are broiling meat. I like to set a timer or alarm whenever I put meat on broil.
Don’t discard the drippings in the baking pan, this can be used as gravy. Very delicious!!
