- 1 lb. Salmon, cut into fillets
- 3 tablespoons Miss ‘P’ All Purpose Mix Seasoning
- 1 teaspoon soy sauce
- 2 tablespoons olive oil
- 1 tablespoon brown sugar
- 1 teaspoon fresh grated ginger
- ¼ teaspoon salt
- ¼ teaspoon black pepper

Combine all the following ingredients in a medium size bowl: Miss ‘P’ All purpose Mix Seasoning, soy sauce, olive oil, brown sugar, ginger, salt and black pepper. In a ziplock bag add salmon fillets, then pour in the marinade mixture. Rub the marinated sauce into the salmon filets. Place in the fridge for about 15 to 30 minutes.
Preheat grill to medium heat. Oil the grill grate. Remove salmon fillets from marinade and place skin-side up on the grill (keep the left over marinated sauce in the bowl to later base the salmon). Cover and cook each side for 5 minutes. Turn salmon over very carefully with a spatula. Use the left over marinated sauce and brush this on the cooked side of the salmon. Cook for another 4 to 5 minutes or until the fish is flaky.
Serve hot with my Mango & Avocado Salsa (see recipe) along with any of the following: Seasoned Rice, Mix Vegetables, Mash Potatoes or Salad.
